If you know me, you know I’m a Yam lover and I enjoy it in any form it is cooked in and that was how this Coconut Pottage or Asaro (as my people call it) recipe came about.
You know those moments when you’re completely uninspired and just plan to throw things together for dinner and you end up making magic? Yeah, this was one of those moments. I had planned on making Coconut Rice, then I spotted the tuber of yam in the corner of the kitchen and I immediately thought of making porridge. I had to pick my struggle, so I picked yam pottage, since we eat rice often. I also eyed the coconut milk can on the kitchen counter and I decided to spice up the pottage with some Coconut Milk and I tell you, it was a great decision.
I cooked the Yam in Coconut Milk and added some Coconut powder to enhance the flavor and the result was the most tender yam pieces infused in a coconutty, tomato rich broth, oh so yum. The Coconut Milk in this Yam pottage makes it so rich and silky. The flavors of the Milk and spices are a match made in food heaven and I’m glad I even tried it.

1 Kg Yam
2 Cooking Spoons Palm Oil
1/2 Med Onions
1/2 Cup Pepper Mix (4 Paprika, 2 Habanero, 2 Tomatoes, 1 Onion)
1 Cup Meat Stock
1 Cube Stock Cubes
2 Tbsps Ground Crayfish
1 Can Coconut Milk
1/4 Tsp Salt
Water (Enough to cook yam)
- Pour palm oil in a pot, when hot, add in chopped onion. When onions looks translucent, pour in blended pepper mix, stir and allow to fry for about 2-3 Minutes.
- Add in Meat Stock, stir and allow to cook for another 5 minutes.
- Taste and adjust for seasoning, then add stock cubes, crayfish, salt then pour in coconut milk.
- Add in the yam pieces into the broth, add enough water to cook the yam, then cover and allow to cook till yam is completely soft and almost mushy.
- Serve with your favorite protein or sauce and enjoy!

I hope you’re all doing good and I hope we all had a somewhat decent Easter Holiday despite everything going on right now? Well I tried to; I did a mini Easter egg hunt with my boys and I also cooked a lot this weekend and it was quite fun. Now back to the order of business, this recipe is the new craze right now, it is a delicious whipped coffee recipe also called Dalgona Coffee. It is made with just three ingredients and it is absolutely delightful. I tried my
hands on it and now I’m completely obsessed, like how are we just finding this out?
If you are a lover of coffee, this is a great way to enjoy your coffee and it is super quick and easy to make, so you can incorporate it into your breakfast sometimes. It only requires three ingredients that are easy to buy or you
just have them laying around in your pantry, so this is not hassle to make at all.

2 Tbsp Instant Coffee
2 Tbsp Sugar
2 Tbsp Hot Water
1. In a bowl, add in Coffee, Sugar and Hot water.
2 .Whisk together for 3 minutes or until its thick and creamy (You can either use a hand whisk or an electric whisk to save stress and time).
3. Pour in Cold Milk and fill up to 3/4 of the glass, then top with the whipped coffee, you can sprinkle a pinch of cocoa powder on it, but that’s completely optional.
4. Stir and Enjoy!
